ORGANIC AVENUE’S PUMPKIN SPICE COCONUT COOKIES
Vegan, Gluten-Free, Grain-Free, Nut-Free
During the holiday season, it’s impossible to escape the explosion of pumpkin everything. This nutrient-dense squash is a staple in festive treats, but often married with less-than-desirable ingredients, including refined sugars, additives and preservatives. Luckily, there are ways to enjoy a pumpkin indulgence in a balanced way, especially if you craft it in your own kitchen (and share with family and friends!). Here’s an easy-to-bake, allergy-friendly recipe for chewy pumpkin spice cookies, starring low-glycemic coconut flour. Yield: 10-12 Cookies
Ingredients:
- 5 tablespoons Coconut Flour
- 5 tablespoons Water
- ¼ cup Arrowroot Starch
- 6 tablespoons Coconut Sugar
- ¼ cup Pumpkin Puree
- 2 tablespoons Coconut Oil (melted)
- 1 teaspoon Pumpkin Pie Spice (feel free to use more if you like ‘em extra festive!)
- Pinch of Himalayan Pink Salt (to bring out the sweetness)
Directions:
- Pre-heat your oven to 350F
- Line a baking sheet with parchment paper
- Combine all ingredients in a large mixing bowl until a thick, well-combined batter is formed
- Using a rubber spatula, spoon batter onto the baking sheet. Use your hands to mold the cookies into your desired shape (works best with slightly wet hands)
- Bake for 15 minutes, and allow to cool for an additional 15 minutes
- Enjoy immediately, or store in a sealed container for 2 days or in the refrigerator for up to 14 days
